Miles Tuddenham

Miles works across hospitality, wine and culture. He is Co-Founder and General Manager of ROAM Restaurant (MICHELIN Guide 2026) in Devon, where he led the development and day-to-day running of a destination dining project rooted in seasonal British cooking and low-intervention wine, with full responsibility for operations & leadership.

Previously, Miles has worked in wine and kitchens across some of London’s most respected hospitality spaces, including St. JOHN, Noble Rot, Planque, Caravel and Norman’s Cafe, alongside consulting work through MISE Consultancy, supporting independent operators with concept development, team training and operational refinement. These experiences have shaped a practical, detail-led approach to service, guest experience and long-term sustainability.

Alongside hospitality, Miles has a background in fine art, and has directed and curated at Usual Business Gallery and Gallery 46 in London both during and following his study at Central Saint Martins. This informs an approach to hospitality that treats atmosphere, pacing and environment as integral to the experience. The Long Goodbye brings these strands together, combining operational discipline with a strong sense of place and cultural intent.
